The Pineapple Express has and will return weekly to Kimball, weather permitting, according to Bill Grubbs, owner of the Pineapple Express food truck.
The food truck goes to Alliance, Gering, Scottsbluff, Wyoming towns – and now to Kimball.
They had an issue about permitting their first time here, but they completed the city's permuting process and are excited to provide some different food options for Kimballites.
Grubbs has had the food truck about two years but has done catering the past eight. Food trucks have the same state food inspection requirements as restaurants in the state of Nebraska.
He prides himself on his unique food options, crediting his years in Hawaii and places such as Germany.
His menu includes varieties of Asian food, BBQ, and Hawaiian, specifically, gyros, California bowls, spring bowls and sushi.
